How Do I Like My Turkey? Deep Fried, Baby!

A few of years ago, I decided to risk all that was sacred on Thanksgiving and deep-fry our turkey. Being a good Southern boy, deep-frying a turkey is as natural a thing to do as eating Moonpies and driving a truck. Because we are somewhat chicken (pun may or may not have been intended), we made a traditional bird as a back-up.

That year, the star of the Thanksgiving dinner, was the Fried Turkey. I was amazed that even I, a dedicated non-cooker, was not able to screw up the overgrown fowl on my first attempt. It was moist and delicious. Hmmmm…. getting hungry all over again just thinking about it.

The year before last, I had my second deep-frying experience. However, I learned one cardinal rule of turkey frying: while you can’t really ruin the bird by over-cooking it, you sure can get less than optimal results by under-cooking. The temperature of the meat was acceptable, but the skin just wasn’t crispy enough.

To combat my relative stupidity in this area in 2009, I have decided to turn to the experts. This year, I am following this recipe, as provided on the very fine FabulousFoods.com website.

My hope is for a repeat of the first year. I will post some pics and give you a virtual taste later today.
